We had such a beautifully pleasing day here yesterday. The object shone all day prolonged in to a night and a heat was splendidly warm. we even shaved my legs in credentials for summer. (I know . . .TMI!)

Anyways, we digress. It was a undiluted day yesterday for a poetic summery sort of salad. we had a little courgettes which we indispensable to use up and a tomatoes in a chopped tomatoes play indispensable regulating up as well. *Butterbean and Fresh Tomato Salad*
Serves 6 to 8

420g (14 ounce) tin of butter beans, emptied and rinsed
500g (1 bruise 2 ounce) cherry tomatoes, quartered
2 tiny green courgettes (if we have yellow they make a great colour contrast

4 open onions, embellished and chopped
a vast handful of uninformed coriander leaves, chopped
2 TBS uninformed lemon juice
3 TBS olive oil
1 tsp belligerent cumin
sea salt and creatively belligerent black peppers to taste
