Tsukudani is a plate we mostly have in a fridge. As we have been mostly creation dashi from blemish we have kombu which can be recycled in to a new dish. Tsukudani can be kombu simmered in a honeyed soy salsa by itself, or we can supplement equipment similar to mushrooms to it.
For this chronicle of Tsukudani, we have combined a little enoki mushrooms which we had on hand.
It is a bit heated in season so we regularly offer this with a little rice. Start with reconstituted kombu, not dry kombu.
1/2 crater kombu, cut in to tiny pieces
1/2 crater enoki, cut in to tiny pieces (or shiitake)
2 Tbsp soy sauce
1 Tbsp sake
1 Tbsp mirin
1 Tbsp sugar
