This is a cake that we have regularly longed for to try, carrying seen them in bake emporium windows . . . though we never had the dariole sort of tin molds that we need to bake them in . . . so we despaired of ever being means to bake them . . . at slightest until we saw this recipe!
Adapted from the cookery book, Women’s Institute Cakes, by Liz Herbert, this sold recipe does divided competely with the traditional tin molds!
Baked in typical paper muffin cases, these have been elementary and uncomplicated. There’s no buttering or flouring of molds . . .
The paper cases flay really simply off the cakes, that have been afterwards simply coated in sieved jam and dessicated coconut.

I hatred to confess it, though we inhaled dual of them utterly incidentally . . . prior to we knew what was happening.

A movement of the traditional English Madeleines, solely using paper cases instead of the tin molds routinely used. Quite, utterly delicious!
4 ounces butter, malleable (1/2 cup)
4 ounces soft margarine (tub) (1/2 cup)
4 ounces caster sugarine (a inexhaustible 1/2 cup)
1/4 tsp vanilla extract
2 vast eggs, beaten
4 ounces self raising flour (1 meagre cup)
1 TBS milk
For the topping:
2 ounces dessicated coconut (1/2 cup)
4 to 5 TBS red ripened offspring conserve, sieved
7 glace cherries halved
Preheat the oven to 190*C/375*F/ gas symbol 5. Place fourteen paper muffin cases on a baking tray. Set aside.
Cream together the margarine, butter and sugarine until soft and fluffy. Beat in the vanilla. Gradually kick in the eggs, a tiny at a time, creation certain any further is throughly incorporated prior to proceeding. If the reduction starts to curdle, supplement a spoonful of the flour and continue. Once the eggs have been utterly knocked about in, overlay in the flour and only sufficient of the milk to have a soft batter.
Divide the reduction similarly amongst the baking cases. Bake for fifteen to twenty minutes, until good risen and golden brown. Remove from the oven to a handle shelve to cold completely.
Once the cakes have been utterly cooled, mislay the paper cases. Place the jam in to a tiny play and comfortable somewhat in the x-ray for about twenty seconds. Place the coconut in to an additional bowl. Using a fritter brush, brush a skinny cloaking of jam over the bottom and sides of any cake. Roll them in to the coconut to cloak the tangled surfaces. The tip of the cakes is right away the bottom. Place on a handle shelve to set. Brush the bottom of any of the cherry halves and use to ornament the center of any cake. Enjoy!!
