we similar to muffins a lot… Whenever we am in a Bakery shop, my hubby or we will sequence for muffins. Though we have an oven of my own, we frequency examination or use fearing of wastage. Out these, new outputs is this truffle glassy lychee muffins. These cup-cake came out sooo good & squashy which they got out of batch on the day 1!

- 3/4 crater maida/plain flour
- 3/4 crater – 1 crater powdered sugar
- 1 tsp vanilla essence
- 1/2 tsp Baking powder
- 2 Eggs, distant at room temperature
- 1/2 crater lychee which is finely sliced (about 12-15 in number, haven a little slices for garnish)
- Pinch of salt
Mix in flour, sugar, baking powder and set aside. In a low bowl, supplement in 2 egg whites and kick them compartment foamy. After that, supplement splash of salt and kick compartment it forms unbending peaks. That is if we lean the vessel upside down, egg whites should not tumble down. Now solemnly supplement egg yolks one after an additional and kick for 5 minutes.
Fold in lychee and dry reduction (flour-sugar-baking powder). The coherence will be easily thicker than idly batter. Add these in greased muffin cups and bake at pre-heated oven for 180 grade celsius for twenty to thirty minutes.
