Tomorrow I am going to make pot stickers. My kids love them so I thought I would attempt to do them myself. They seem easy enough. For John, who will not eat pot stickers, I am making Lemon Butter Salmon. I will serve this all with rice.
Pot sticker: Ginger pork

6 ounces ground pork
1/4 cup diced white onion
2 tablespoons minced ginger
1 tablespoon minced garlic
4 tablespoons diced green onion
1 teaspoon soy sauce
1/4 teaspoon sesame oil
Pinch salt and pepper
12 round wonton/potsticker wrappers
1 egg, whipped
1 teaspoon oil
In a medium bowl, add the pork, onions, ginger, garlic, green onions, soy sauce, sesame oil, salt and pepper. Mix together until thoroughly combined. In a medium stock pot, boil 2 quarts of water. Place 1 tablespoon of the mixture in the middle of a wrapper. Brush the edges of the wrapper with the end and fold in half. Repeat with the remaining wrappers. Place wrappers in boiling water for 1 minute, remove, and cool individually on cooling rack. When ready for service, heat saute pan with 1 teaspoon oil, and saute on medium-high heat until the skin of the wrapper is browned.
Lemon Butter Salmon

Yield: 5 servings.
2 teaspoons minced garlic
1/2 cup butter, cubed
6 tablespoons lemon juice
2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon hot pepper sauce
5 salmon fillets or steaks (6 ounces each)
In a small skillet, saute garlic in butter; whisk in the lemon juice, salt, pepper and pepper sauce. Transfer 2/3 cup to a serving bowl; set aside. Place salmon in a greased 15-in. x 10-in. x 1-in. baking pan. Drizzle with remaining lemon butter. Broil 4-6 in. from the heat for 10-15 minutes or until fish flakes easily with a fork. Serve with reserved lemon butter.
