Tomorrow we have been carrying Parmesan Chicken for dinner.  On the side I’m starting to offer a Mushroom Salad and Pommes Sautees an Lard that is potatoes baked in bacon grease.

Cooking Light – Lori~M&M’sMom
Yield: 1 serving.

1 6oz skinned chicken breast half
1/2 teaspoon olive oil
1 tablespoon (1/4 oz) grated uninformed parmesan cheese
1/8 teaspoon dusty thyme
1/8 tsp salt
Dash of black peppers
Cooking spray
1/4 crater fat-free, reduction sodium chicken broth

Preheat oven to 400 degrees. Brush chicken with olive oil. Combine cheese and subsequent 3 reduction in a tiny bowl; shower cheese reduction over both sides of chicken. Place chicken in a shoal plate coated with in progress spray, and flow gas over chicken. Cover and bake at 400 degrees for 40 mins or until done.

Mushroom Salad

Thinly cut symbol mushrooms; toss with finely chopped carrots and celery and brew with mung bean sprouts. Finish with peanut or olive oil, sherry vinegar, a small soy salsa and minced ginger. (This is a super vinaigrette, by the way.)

Pommes Sautèes au Lard (Potatoes Sauteed in Bacon)

3 oz chunk or thick sliced bacon, cut in to 1/4″ pieces
2 Yukon bullion potatoes, peeled, cut in half, afterwards cut in to 1/4″ cubes
1 garlic clove, thinly sliced
2 sprigs flatleaf parsley
salt and pepper

Heat a saute pan over med feverishness and supplement bacon. Cook until bacon only starts to crisp. Don’t frail it as well most prior to adding the potatoes or the bacon will finish up burnt by the time the potatoes have been done. Stir the bacon spasmodic whilst cooking. Add the potatoes and cook (15-20 min), stirring and tossing frequently. When potatoes have been cooked, supplement garlic and cook for about 2 some-more minutes. Season with parsley, salt and pepper.
