Yield: 1 serving.
1 6oz skinned chicken breast half
1/2 teaspoon olive oil
1 tablespoon (1/4 oz) grated fresh parmesan cheese
1/8 teaspoon dried thyme
1/8 tsp salt
Dash of black pepper
1/4 cup fat-free, less sodium chicken broth
Preheat oven to 400 degrees. Brush chicken with olive oil. Combine cheese and next 3 ingredients in a small bowl; sprinkle cheese mixture over both sides of chicken. Place chicken in a shallow dish coated with cooking spray, and pour broth over chicken. Cover and bake at 400 degrees for 40 minutes or until done.

Thinly slice button mushrooms; toss with finely chopped carrots and celery and mix with mung bean sprouts. Finish with peanut or olive oil, sherry vinegar, a little soy sauce and minced ginger. (This is a super vinaigrette, by the way.)
Pommes Sautèes au Lard (Potatoes Sauteed in Bacon)

3 oz slab or thick sliced bacon, cut into 1/4″ pieces
2 Yukon gold potatoes, peeled, cut in half, then cut into 1/4″ cubes
1 garlic clove, thinly sliced
2 sprigs flatleaf parsley
salt and pepper
Heat a saute pan over med heat and add bacon. Cook until bacon just starts to crisp. Don’t crisp it too much before adding the potatoes or the bacon will end up burnt by the time the potatoes are done. Stir the bacon occasionally while cooking. Add the potatoes and cook (15-20 min), stirring and tossing frequently. When potatoes are cooked, add garlic and cook for about 2 more minutes. Season with parsley, salt and pepper. Serve immediately.
