Crispy Ranch Chicken
Preheat oven to 350. Spray a large baking sheet with nonstick cooking spray. Combine the rice cereal, Parmesan and ranch salad dressing mix in a large bowl. Place beaten egg whites in a medium bowl. Dip each chicken thigh in the egg whites and then in the cereal mixture to coat evenly. Arrange the coated chicken on the prepared baking sheet. Bake until golden and juices run clear when chicken is pierced with a knife, 20-25 minutes. Serve hot
Creamy Mushroom and Onion Gratin Bake

Preheat the oven to 350F. In a large skillet, sautee the onions in half the butter or margarine for three to five minutes, until just barely soft. Set aside. Over medium-low heat, cook the mushrooms in the remaining butter or margarine for just a few minutes. Combine the onions, mushrooms and remaining ingredients, except breadcrumbs, and gently toss to combine. Place the mixture in a casserole dish, and sprinkle the breadcrumbs on top. Bake for 20 to 25 minutes. Remove from oven and sprinkle with additional Parmesan cheese and salt and pepper if desired.
