Beef Soup with Root Vegetables

1 bruise weak beef turn beef
2 tablespoons olive oil
2 stalks celery, sliced
1 vast onion, coarsely chopped
1 middle carrot, sliced
2 cloves garlic, minced
2 14-ounce cans beef gas
1 crater H2O
2 sprigs uninformed thyme
1 brook root
2 middle potatoes, peeled and cut in to 3/4-inch cubes
2 middle turnips, peeled and cut in to 3/4-inch cubes
1 vast honeyed potato, peeled and cut in to 3/4-inch cubes
Flat crackers or crusty Italian bread (optional)

1. Trim fat from meat. Cut beef in to 3/4-inch cubes. In a 4-quart Dutch oven cook meat, half at a time, in 1 tablespoon of prohibited oil over middle feverishness until brown. Remove meat.

2. In the same Dutch oven feverishness the superfluous 1 tablespoon oil over middle heat. Add celery, onion, carrot, and garlic; cook for 3 minutes, stirring frequently. Drain off any fat. Return beef to Dutch oven.

Stir in potatoes, turnips, and honeyed potato. Bring to boiling; revoke heat. Simmer, covered, for fifteen mins some-more or until beef and vegetables have been tender. If desired, offer the soup with crackers. Makes 6 (1 3/4-cup) servings.
