Hi everyone!

Tomorrow we are having Bacon Wrapped Chicken for dinner.  My men won’t like the cream cheese filling so I will skip that.  On the side we’re having a vegetable casserole from Campbell’s.

Bacon Wrapped Chicken

4 boneless, skinless chicken breasts
8 oz cream cheese
1/2 cup chopped green onions
8 strips of bacon (raw)

Soften cream cheese, add chopped green onions. Mix well. Pound and flatten chicken breasts, drop a heaping tablespoon of cream cheese mixture in middle of each breast, pulling up each side. Wrap with bacon strips and secure with toothpicks. Sprinkle with course black pepper. Bake at 375 uncovered for 30-40 minutes. Brown under broiler for last ten minutes.

Campbell’s Swiss Vegetable Casserole

All Recipes Yields: 4 servings

1 (10.75 ounce) can Mushroom Soup
1/3 cup sour cream
1/4 teaspoon ground black pepper
1 (16 ounce) bag frozen vegetable combination
(broccoli, cauliflower, carrots), thawed
1 (2.8 ounce) can French-fried onions
1/2 cup shredded Swiss cheese

1. Stir soup, sour cream, black pepper, vegetables, 2/3 cup onions and 1/4 cup cheese in 2-quart casserole. Cover casserole.
2. Bake at 350 degrees F 40 minutes or until vegetables are tender. Stir vegetable mixture.
3. Top with remaining onions and cheese. Bake 5 minutes or until cheese is melted.
