Serves 4 to 5
Much improved for we than the mayonnaise brimful potato salad of yore, nonetheless still any bit as juicy and healthier with the further of lots of immature unfeeling break and snap!
2 1/2 pounds of slick new potatoes, halved or quartered if large
6 vast radishes, embellished and finely sliced
a vast handful of uninformed chives, finely snipped
1/2 of a punnet of grained grained mustard cress, snipped
a vast handful of uninformed haricot beans, embellished and cut in to dual in. lengths
a handful of solidified petit pois, thawed and drained
1 TBS minced uninformed dill weed
For the dressing:
2 TBS creamed horseradish
2 TBS great peculiarity mayonnaise
the extract of half a lemon
4 TBS great peculiarity olive oil
fine sea salt and creatively belligerent black peppers to taste
Bring a vast saucepan of easily pickled H2O to the boil. Add the potatoes and cook for fifteen to twenty minutes, until tender, adding the immature beans during the final 5 minutes. Drain good and afterwards tip in to a vast salad bowl. Toss in the peas.
Whisk together the sauce mixture and flow them over the vegetables. Season with a little sea salt and black peppers to taste. Allow to cool. Add the radishes, chives and cress, folding together gently. Serve at room temperature.
