This is a tasty gratin which we initial done 3 years ago right away which we had pinched from one of my Waitrose Recipe cards which we have picked up by the years. It became a fast prime at really initial bite. Some things have been only value repeating we think, and this is one of them.
Something which we schooled really early on in my gardening hold up is which when we plant courgettes we had improved be rebuilt to use and cook a lot of them, since they grow similar to insane and have been really prolific.
Thankfully we adore courgettes and we have found them to be a really versatile vegetable. We have them proposal in salads and with dips as a crudite. They have been additionally great, grated and oven baked in to loaves, muffins and cakes.
They’re illusory stir boiled with a bit of onion and garlic, and a tiny herbs, creation for a tasty side dish.
The proposal immature blossoms, pressed with herby cheese, dipped in egg and breadcrumbs, and afterwards boiled . . . tranquillity . . . pristine bliss.

*Courgette and Tomato Gratin*
This tasty gratin is a tasty matrimony of developed tomatoes and tiny courgettes. Toss with a bit of pesto and covering underneath a cheese and particle topping. This is tantalizing scrummy!
500g courgettes, topped, tailed and thinly sliced (about 1 1/4 pound)
2 TBS uninformed immature basil pesto
400g uninformed developed red tomatoes, sliced (about one pound)
4 TBS uninformed bread crumbs
25g clever cheddar cheese, grated (about 1/4 cup. I’ll be honest here, we do
use some-more since we adore cheese.)
1 clove of garlic, peeled and crushed
large splash of cayenne pepper
1 TBS olive oil
Preheat the oven to 220*C/425*F. Place the courgette slices in a vast play and toss together with the pesto until easily coated. Layer in vast 2 litre gratin plate with the tomatoes. Season to ambience with a tiny salt and peppers if desired. Toss the bread crumbs in to the same play we churned the courgettes in (that approach each residual bit of pesto gets used) and toss them together with the cheese, garlic and cayenne. Sprinkle over tip of the vegetables in the gratin dish. Drizzle with a bit of olive oil if desired. Bake for thirty minutes, or until the tip is golden and the vegetables have been tender.
