Tomorrow we are having Tony’s Chicken Tenders with Honey Mustard Sauce. My 6 year old loves honey mustard sauce so I am going to make it just for him. Otherwise, you could skip the sauce if honey mustard isn’t your thing. On the side we’ll be having the Steamed Onion Soup Potatoes and a salad.
Tony’s Chicken Tenders with Honey Mustard Sauce

Peanut oil, for frying
2 pounds boneless, skinless chicken breasts
1 cup all-purpose flour
2 cups panko bread crumbs (I needed slightly more)
1 teaspoon garlic powder
1 teaspoon lemon-pepper
1/2 teaspoon cayenne
1/2 teaspoon salt
1/2 teaspoon pepper
Honey Mustard, recipe follows
Preheat oil to 350 degrees F. Cut the chicken breasts into long strips and set aside. Beat the 3 eggs in a separate bowl and measure the flour into another separate dish. Measure the panko into a pie plate or shallow bowl and season with garlic powder, lemon-pepper, cayenne, salt and pepper. Dip the chicken strips into the flour, the beaten egg and then dredge them into the seasoned panko. Fry in the hot peanut oil for 6 to 8 minutes, until golden brown, and remove to a paper towel lined sheet tray. Serve with honey mustard sauce.
1/2 cup Dijon mustard
1/2 cup honey
2 tablespoons mayonnaise
1 tablespoons lemon juice
Salt and pepper
Mix all the ingredients in a small bowl and season with salt and pepper. The sauce can be held in the refrigerator for 1 week.
Steamed Onion Soup Mix Potatoes
6-8 red or Yokon gold potatoes, skin on and halved or quartered
1/3 cup diced onions
1 tbsp olive oil
1 packet dry onion soup mix
1/2-2/3 cup water (or more as needed)
In a Dutch oven or deep skillet, saute the onions in olive oil until softened. Add potatoes and sprinkle with onion soup mix, toss. Add water and put lid on the pot and let the potatoes steam 5 minutes. Stir, check for doneness and add more water if needed. Continue to steam until potatoes can be pierced with a fork. Remove lid and stir potatoes until water has evaporated and the soup mix has turned into a gravy-like consistency.
