Serves 4 to 6 (depending on how miserly we are!)
Picture a deliciously light, oven baked lemon batter, with a tingly lemon spread at the bottom. Now douse it with pouring cream, or a dollop of creme fraiche . . .
2 1/2 ounces unsalted butter, room temperature
6 1/2 ounces caster sugar
2 tsp finely grated lemon zest
3 vast eggs, separated
1 unit self raising flour
6 ounces milk
4 TBS uninformed lemon juice
icing sugarine to dust
thick pouring cream, to offer (or creme fraiche)
Pre-heat the oven to 180*C/350*F. Lightly butter a 5 cup ovenproof ceramic dish. Set aside.
Using an electric whisk, kick the butter with the sugarine and grated lemon liking together until light and creamy. Gradually kick in the egg yolks, violence good after any addition. Fold in the flour and the milk, alternately to have a well-spoken though runny batter. Stir in the lemon juice.
